I’m a major chocolate addict. The only way I manage to live a gluten free and dairy free existence is knowing chocolate still remains a big part of that lifestyle.
Here’s the thing though, I am not some fancy baker, I don’t own an oven, or even the right ingredients like Morde/Callebaut/Ghiradelli cooking chocolate. For me, its been hit and miss experiments with easy to make desserts, and luckily this was a HUGE hit. Only three ingredients, all of which lie in most pantries, and 12 minutes of cooking time to create this fudgy brownie? Hell, yes!
Here’s all you need: Ripe Bananas, Almond Butter, Unsweetened Cocoa Powder. That’s it! The riper the bananas, the better it is for making these brownies. And keep the almond butter at room temperature, we need both the oils from the almond butter as a fat and grain substitute. The exact breakdown is below:
1 Ripe Banana
2-3 Tbsp Almond Butter
1 Tbsp Unsweetened Cocoa Powder
Blend all 3 ingredients, throw in a splash of vanilla essence for flavour. You can add a 1 spoon of any sugar/syrup you like, but I prefer mine to be less sweet and more chocolatey. Bake in the oven for 12 minutes at 180C, Since I don’t own a proper oven I used the convection setting of my microwave and they came out fudgy and perfect.
I sometimes tweak the 3 ingredient rule, and added chocolate chips on top of the mixture right before putting it in the oven. Also, don’t pre-heat the oven, we’re using simple ingredients here, and overcooking this batch will result in the brownies coming out hard.

Hi Yone, Apologies for the delayed reply! I use a 12x12cm size small pan since I’m using lesser ingredients, I recommend you start with the ingredients mentioned here to test a small batch first. With 1 banana you’re going to end up with 4 big brownie pieces in the pan size I use. Also it takes 9 minutes to bake these on 350F. Don’t require much of cooking time as you’re dealing with 3 very simple ingredients.Hope this helps!
